Delicious Mexican Lasagna Recipe for Easy Weeknight Dinner

When you’re looking to change up your traditional Taco Tuesday this Mexican Lasagna could be what you’re looking for. Mexican lasagna is a fun and flavorful twist on traditional Italian lasagna. Combining layers of spicy ground beef, tangy salsa, and melted cheese, beans and fajita veggies this dish is sure to be a hit with everyone.

Ingredient Prep

The easiest way to bring this together quickly is to cook all of the ingredients in the same pan one after another.  This will keep the number of dirty dishes down, and since the ingredients all get combined in the end it’s alright if they taste similar from using the same pan.

This could come together with any combination of traditional taco ingredients. I could see this working well with chicken, steak or even just all veggies.  I used whole black beans since that is what I had on hand, but it could also work well with refried as well.  It could even be a nice layer in the middle to help hold it all together better than just the beans did. 

 

Assembly

Once you have all of the ingredients prepped you’ll just layer them all together on top of either flour or corn tortillas.  I used corn so I made sure to cook them prior to adding them.  I also sliced them in half so that way they would fit better in the pan. And for this I used a glass 9in x 13in baking dish.  

Baking

Now that you have the pan loaded up you’ll want to cover it with foil for the first 15 minutes of cooking. This way the cheese won’t burn before the rest of it bakes through.  As always I use my toaster oven so I have it set to 375F, and then if needed I can turn it down later if the cheese is starting to get a little too brown. After those 15 minutes you will remove the foil so the cheese can brown up and it can finish cooking through.

Mexican Lasagna Recipe

Ingredients

1lb Ground Beef
1 15.5oz can Black Beans
1 15.5oz can Sweet Corn
1 Bell Pepper Sliced
1/2 White Onion Sliced
1 15.5oz Red Enchilada Sauce
1 cup Shredded Cheese
Tortillas
Taco Seasoning
Salt
Pepper
1 tbsp Canola Oil
2 tsp Cumin
2 tsp Mexican Oregano
2 tsp Smoked Paprika
2 tsp Chili Powder

Instructions

Preheat your oven to 375F.

Sauté your ground beef until browned and add your taco seasoning and cook according to the directions on the package.

Remove the ground beef from your pan and set aside, and add a little oil to the pan if you don't have any fat left in the pan. Once hot add your sliced pepper and onion and season with salt and pepper and sauté until softened and then remove from the pan.

In the same pan you will cook the beans, and the corn.  You'll season them with either more taco seasoning or with any combination of spices you like.  I like cumin, Mexican oregano, smoked paprika and chili powder.  And you are just cooking them to heat them up and to add some flavor.

Once you have your ingredients prepped you'll start assembling by adding some red sauce to the bottom of your 9x13in pan. You'll top that with your first layer of tortillas, followed by all of your ingredients including sauce and cheese.  And you'll continue to layer the ingredients until your pan is full.  Then you'll top with a layer of cheese.

Then bake at 375F for about 30 minutes or until the top cheese is melted and browning.  And it would be best to cover the pan with foil for the first 15 minutes so it doesn't over brown.  Then when it's done let cool slightly to let it setup and then slice and serve.
