For the apples I ended up using Gala because that is what I had on hand at the time. And although they aren’t typically listed as one of the preferred baking apples it still turned out good. They had a slight chew to them which we didn’t mind, especially when the bread was toasted. But I would be curious to try with a “standard” baking apple like a Ida, Granny Smith or Honeycrisp.
I also didn’t peel all of the apples because I was kind of in a rush and it didn’t seem to adversely effect the bread at all. I might not want to use all non-peeled apples but I would say the peels actually gave a nice looking pop of color in the bread which was nice.
My bread machine has a little dispenser at the top that will drop your mix-ins at the right stage of the process, but if your machine doesn’t have this feature just add them after the final knock-down or just before the final mixing stage. Some people even like to toss their apples in some flour so they don’t all sink to the bottom of the pan, but if you add them late enough in the process there shouldn’t be an issue with sinking.
I ended up using the “Sweet” setting on this loaf just to see how it would work out and I think it turned out really well. It is a little longer of a bake but it didn’t seem to burn anything or make the bread tough. But I would think you could also use your standard Basic White Bread setting and it would turn out great as well.

Bread Machine Apple Cinnamon Bread
Ingredients
Main Ingredients
1 cup Water
2 tbsp Brown Sugar
1 tbsp Dry Milk Powder
1 tsp Ground Cinnamon
1 tsp Salt
2 1/4 Cups Bread Flour or AP Flour
2 1/2 tsp Active Dry Yeast
For the Apples
1 Apple Peeled and Diced
3 tbsp Brown Sugar
2 tsp Cinnamon
1/4 tsp Nutmeg
1 tbsp Flour (See Note)
Instructions
Make sure your paddle is in the correct position.
Add the ingredients to your machine in the order recommended by the manufacturer. In my machine I add the wet ingredients first, followed by the dry.
For this I used the Sweet Setting and used a 1.5lb Loaf Size.
Notes
You can mix the apples in flour if you are worried about them all sinking to the bottom of your pan. In this bread machine I don't have to do this step because it adds them near the end of mixing so they don't have time to get to the bottom in time.
